Spring is having a hard time coming this year; just when I think it's really here, we have a forecast of cold weather with not just rain, but snow. April is a also a hopeful month. It's a wonderful thing to discover spring at the end of a long winter. One of the things I love about living in a place with very distinct seasons is the feel and the smell and sounds each season brings. After smelling cold winter air for much too long, I'm beginning to think the air smells even a little more green, or is that just my imagination? No matter what the weather is today, what is left of April, there has to be some beautiful spring days coming up.

Beautiful days can also mean busy days, so all of us like things that can save us time. I know many of you,like me use boughten yeast dough that is in the freezer section at the grocery store. However, many of us don't plan ahead and the frozen dough just takes too long. Here's how to use the microwave and cut bread-baking time as much as an hour and a half! After the dough is thawed, place in greased large bowl, turn dough upside down to grease the top. Place pie plate in the microwave; pour 1 cup of very hot water in plate; place bowl in plate of hot water. Cook, covered with vented saran wrap on low (10%) power 10 to 14 minutes until doubled, proceed as recipe directs. To cut 45 minutes from the second rise and after shaping the dough place it in a glass loaf pan and cook covered on low 5 minutes, let stand 10 to 15 minutes until doubled. Bake as usual.

This is one of my favorite using Rhoads dough. Also I go to the Rhoads dough website on the Internet for many, many more recipes. This recipe I make quite often.


2 loaves Rhoads frozen

bread dough

1 cup brown sugar

1/2 cup butter

2 Tablespoons milk

1/2 teaspoon cinnamon

1 pkg. vanilla pudding


Thaw frozen bread, then cut into pieces. Scatter bread pieces into greased 9X13 inch pan.

Cook butter, brown sugar, milk, cinnamon and pudding; bring to a boil. Pour mixture over bread pieces.

Let set in refrigerator overnight, then bake at 375 degrees for 30-35 minutes.

Serve warm or cool.
