EASY BEEF BURGUNDY

We'll be saying good-bye to March and hello to April. Spring is already here. However, this morning it is more like changeable March and winter should be gone. It has been a different Iowa winter and many March days were more like summer than a unpredictable March. No matter what the weather is today when I think of April coming, I am hopeful.

Today the lawn will probably get mowed, something that has never happened in March before. A few weeks ago the air just smelled green and now it is green and my spring flowers are in full bloom. Even though today is cold and blustery the weather man is promising a return to warm spring temperatures. That's one thing I love about living in a place with very distinct seasons. I like the fall, the smells and sounds each season brings.

I, like so many of you, have told me you're tired this spring. Well, Daylight Savings Time was a whole month early this year and it is March Madness time and that has caused a few late nights, or maybe we're tired just thinking about the extra work spring causes. I had this gem tucked away in my desk so maybe this is why I'm feeling tired: This came to me compliments of the Country Register.

If you're an adult of average weight, and activity level, you accomplish a lot in 24 hours. Your heart beats 103,689 times. Your blood travels 168,000,000 miles. You breathe 23,040 times. You inhale 438 cubic feet of air. You eat 3.25 pounds of food. You drink 2.9 quarts of liquid. You lose 7/8 pounds of waste. You speak 4,800 words, including some unnecessary ones. You move 750 muscles. Your hair grows .01714 inches. You exercise 7,000,000 brain cells. OF COURSE, YOU'RE TIRED!

After reading that, I'm tired and I need an easy recipe to fix.

EASY BEEF BURGUNDY

2 lbs. stew beef, cubed

2 10-3/4 oz. cans cream of mushroom soup

2 4 oz, cans mushrooms, drained

2 cups red wine or beef broth

1-1/2 package onion soup mix

3-4 cups prepared noodles

Combine all ingredients, except noodles, in a 2 quart baking dish. Bake at 350 degrees for 3 hours, stirring occasionally. Serve over prepared noodles. Serves 6 to 8. This is so easy I double the recipe and freeze the other half for another day. When you're busy, or just don't feel like cooking you'll have a warm, yummy meal.
