CHOCOLATE ANGEL FOOD DESSERT

The big game is over and truthfully I can say I was very neutral. It was a very exciting and good game. The half-time show with Madonna was very good and glitzy. I guess there was an offensive part of the show, but I didn't notice it. Like always I enjoyed the commercials. My favorite was the dog getting in shape. I enjoy any commercials with animals and babies, or kids. I have to admit I didn't pay as much attention as I usually do. I was reading my book with an ice bag on my face. I had a bad root canal and I was doing everything to take my mind off my jaw. However, I did learn something. My husband brought up the Roman numerals associated with the game and he was surprised I didn't know my Roman numerals too much and that their placement means whether you add or subtract to get the number. I just don't know why they have to number these games with Roman numerals. One thing I do know is Valentine's Day is next week. A day to think about the love we feel for many.

For children, Valentine's Day means hearts, cards, parties and excitement. Valentine's Day can be very different for adults. The love day can be a symbol that may not have love work for us as we like. I heard recently that first a person must learn to love themselves and to open our hearts to love. Real love flows from us, to others and back again. Every person, at every stage of life and at every age is saying the same thing. From the day we were born to the nursing home, they are asking, "Does anyone love me?" Well we are creatures to be loved and to love. Everyone should have that and deserves special treatment.

I still do the things I've done for years to observe Valentine's Day. Of course, like so may celebrations in my life, it has to do with food. If we don't go out to eat it means a special meal and always a heart shaped, red jello heart and heart cut-out cookies. I started doing that when my kids were babies and I still do it. There are so many ways to show our love usually with flowers and chocolates. Fixing something special, like a dessert, is a way to show your love. I like something made with chocolate.

CHOCOLATE ANGEL FOOD DESSERT

1 angel food cake

2 German sweet

chocolate bars (regular

size)

2 Tablespoons water

4 eggs, separated

1/2 teaspoon salt

1 teaspoon vanilla

2 cups Cool Whip

1 small pkg. sliced

almonds

Break chocolate bars in small squares in double boiler. Add water and slowly heat until chocolate is melted. Beat egg yolks until frothy.

Beat in salt and vanilla. Beat egg mixture into chocolate. Cool. Beat egg whites into peaks and fold into cooled chocolate mixture. Fold in Cool Whip.

Slice cake in very thin slices. Place a layer in the bottom of 9 X 13 pan.

Spoon half of chocolate mixture on top. Repeat a layer of cake, layer of chocolate, so that the chocolate is the last layer.

Refrigerate at least 5 hours. To serve: cut in squares, top with whipped topping and almond slices. Keeps well in the refrigerator several days.
