New Year's Eve Sandwiches

I hope your Christmas was as good as ours, except we were missing David and his family, but they just couldn't make it this year. Everyone else was there and it was strange not having it in my own home, but I did help with some of the planning. Steve and Vicki's home in Pleasant Hill looked beautiful and Steve moved out some of their furniture so we could all eat together. Our daughter, is a lot like me when it comes to falling in love with dishes, china and glass-wear. No paper plates for her; her husband says she has dishes for every occasion. Maybe the only holiday she forgets is Ground-hog Day. Anyway she has beautiful Christmas china and plenty of goblets that were wedding presents just about 35 years ago. Table clothes, greenery and candles really set the mood. When I thanked her for doing Christmas this year, she said she really enjoys doing it and everything went like clockwork and she didn't even get flustered like I have as I've grown older. And we certainly had enough to eat and Kevin really made the night by making homemade ice cream. This was something Virgil always did, but as you get older some of those things you just don't care about anymore, but apparently he did. It's also nice that now I just kind of sat and watched the granddaughters and my kids doing the dishes and cleaning up. Vicki and Steve also have a big basement which made it nice, we could go there and not feel crowded. All in all it was very nice holiday and the weather really cooperated.

Now that I'm back home I'm going to finish my Christmas cards, rest and think of the new year that will soon be here. I always make plans as a brand new year approaches. I always think I could improve my character and probably many more things I could improve, but my mid-January I realize that all my great intentions have dissolved into dust. This year I think I will find a better solution to the problem. My New Year resolution is-NO resolutions.

I know now I will never learn the metric system. I'm never going to weigh 118 lbs. again. I'm always going to be a back-seat driver and I will never have a well-organized purse because then it would be impossible to rummage around looking for something, a habit that irritates my husband and some of my friends. I will always be more cautious, than care-free, more pesky than perky. I'll probably have a chipped nail and I will never learn to play chess, though my sons tried. I know I will never do a real push-up, read some classic books, or study tap-dancing because I know I would fail. Lastly I will always think that if I'd tried harder maybe I could have achieved perfection.

So when it is time to ring in the New Year we will celebrate by having some of those great snacks. This is a favorite at our house.

New Year's Eve


2 small cans of ripe diced


1 lb. grated mild cheddar


1/2 cup cooking oil

1 teaspoon oregano

Finely diced onion, to


salt and pepper

a little garlic, optional

Mix the above ingredients and spread on cocktail rye bread. Bake at 350 degrees for about 5 minutes. May be prepared ahead and frozen. Allow a few more minutes longer in oven if still frozen.
