Have you been to the pumpkin patch to pick out your pumpkins yet? I haven't planted any pumpkins for quite a while, but there's a certain satisfaction in growing your own jack-o-lanterns. Maybe next year I'll try it again and also grow some of those colorful gourds. My older kids are asking now for some of those fall things to use in decorating. This used to be the time I'd go out looking for bitter sweet but the only place where I can get those things is the Farmer's Market.
Some of these things are hard to find, it must be because of the farm chemicals that are used.
Even though we're very busy here on the farm this season is always my mellow time. It must be because night falls earlier and earlier and I want to be outside. I feel I want to enjoy all that's left of this beautiful weather. I know one of these days it's all going to change. I've always said I wish I could bottle some of these warm days and open it up in the cold of the winter. These warm memories would be sweet to recall.
If only we could be made much more aware that each day and happenings are being recorded in our minds only to resurface once again at a later date as thoughts and memories. Just recently I had someone say something quite ugly, not just to me but also to the people around me. I decided that person isn't someone I'm going to record. We can always turn our backs on ugliness and open our minds to more pleasant thoughts. After all , I am the master of my mind. None of us can blame our thinking on anyone else because no one can do our thinking for us. We all know people who try to control other people and circumstances. These people go straight ahead hurting people, even knowing they are wrong just so they get their way. In the end they usually are paid back. I know my own thoughts are most often the best thoughts and some of those unpleasant memories are best forgotten.
I did forget to put this recipe in last week. I was asked if I had any pumpkin dessert recipes. I have quite a few of those but I was surprized when some friends and relatives said they didn't like pumpkin at all, but I do believe there are plenty of us that can't get enough of pumpkin desserts. This is a favorite of mine.
1 2/3 cups sugar
1 cup vegetable oil
1 (15 oz.) can solid pack
2 cups all purpose flour
2 teaspoons cinnamon
2 teaspoons baking
1 teaspoon baking soda
1 (3 oz.) package cream
2 cups confectioner sugar
1/4 cup butter, softened
1 teaspoon vanilla
1 Tablespoon milk
In a mixing bowl, beat eggs, sugar, oil and pumpkin. Combine flour, cinnamon, baking powder, soda and salt; gradually add to pumpkin mixture and mix well. Pour into an ungreased 15 x 10 x 1 in. baking pan. Bake at 350 degrees for 25-30 minutes. Cool completely.
For icing, beat cream cheese, sugar, butter and vanilla in a small mixing bowl. Add enough of the milk to achieve desired spreading consistency. Spread over bars.
