Christmas is here! I have been very busy getting ready for my family to come. Most of my family isn't real close so it means all we can hope for is good weather. On Christmas Eve dinner there will be 25 of us sitting down to eat and enjoy Christmas together. However, I'd like to take time to wish all of my readers of "THE COOKING CORNER" a Joyous Holiday Season with your family and friends, always remembering, "Let there be peace on Earth."
I'm not very good at writing poetry but here is my attempt that I wrote a few years ago.
I Love the Christmas
season
season
Just like I always did
Those many years ago
When I was still a
wide-eyed kid.
I enjoy the fun of
shopping
For that special
Christmas tree,
And when it's trimmed
and lighted
No one's happier than
me!
I love to watch the faces
Of my little girl and boys
As they open up their
presents
And see their Christmas
toys.
I like to send out
Christmas cards
And wrap each gift with
care-
Help plan the family
gathering
For all of us to share.
To me, each holiday
Is more joyful than the
last.
My one complaint is that
it seems
To hurry by too fast!
And I'm quite sure that
when
I'm very, very old and
gray
I will still believe that
Christmas
Is a very special day!
Here is a last minute recipe you may need.
BREAKFAST
CASSEROLE
1 lb. bacon (fried and drained) can use ham or sausage
9 eggs slightly beaten
3 cups milk
1 tsp. salt
1 1/2 tsp. dry mustard
3 slices fresh bread,
cubed
1 1/2 cups cheddar
cheese, grated
Mix all ingredients. Put in a greased 9 x 13 pan. Refrigerate overnight. Bake uncovered 1 hour at 350 degrees. Can be frozen either baked or unbaked. Serves 8.
